Chocolate Chocolate Pie Recipe
Chocolate Cookie Crust
21 Glutino Gluten Free Chocolate Vanilla Cream Cookies Crumbed
1/2 stick of melted butter
Chocolate Pie Filling
1/4 cup cornstarch
1/3 cup sugar
small pinch of salt
3 heaping Tbs. unsweetened cocoa powder
2 cups milk
1 Tsp. vanilla
Preheat oven to 350 degrees.
Process cookies in a food processor or in a plastic bag until crumbed. Mix with 1/2 stick (4 Tbs.) melted butter. Save a tablespoon of crumbs out for garnish and set aside. Pat the rest down into an 8 3/4″ pie pan. Bake in a preheated oven for ten minutes, allow to cool.
Whisk cornstarch, sugar, salt, cocoa powder together in a pan. Add milk a little at a time until all is incorporated. Cook on medium heat stirring constantly until mixture is thick and bubbly. Remove from heat and stir in vanilla. Allow to cool completely. Pour into cooled chocolate pie shell and allow to set up. Refrigerate any leftovers.
