MARIE’S SHEPHERD’S SALAD
Go to taste on dressing.
1 head Romaine lettuce, chopped into small pieces, set aside
3 tomatoes cut into pieces
1 English cucumber diced
1/4 red onion chopped
1 green pepper diced
Handful Italian parsley (flat leaf) minced
6 tablespoons The Spicy Olive’s fresh single varietal olive oil
1/4 cup The Spicy Olive’s red wine vinegar
1/4 cup fresh lemon juice (omit lemon juice and use Lemon olive oil)
1/4 to 1/2 lb. feta cheese
12 kalamata olives (optional)
1 teaspoon oregano, dried or palmful fresh, minced
Salt and pepper to taste
Place tomatoes, cucumber, onion, pepper, and parsley into salad bowl. Combine olive oil, vinegar, lemon juice, salt and pepper, blend completely.
Pour over salad and mix.
Make a small pie of Romaine on plate. Top with salad.
Sprinkle with feta, olives and oregano.
