A Centerville woman has the recipe for cheap, easy dinners all working moms crave. Here's what you Need 2 Know about how she combines affordable with tasty and nutritious.
The night we caught up with Erin Chase she was cooking a beef roast with fresh squash, green beans and rice for her family of four. Not only is it a healthy meal, it cost her just $3.59.
What started out ten months ago as Erin simply looking for ways to cut down her grocery bill has turned into a 20 hour a week job. Now she has a website, 5dollardinners.com , which has one of the five most popular blogs in the country in its category. Chase says she's surprised how quickly the website has taken off.
"I'm just a mom cooking meals and sharing them on line," Chase said. "So it's been really exciting and I'm really fortunate to be able to share it with so many people because that's what I really wanted."
According to Chase, there are three essentials to making a five dollar meal. Having a strategy for grocery shopping, meal planning and effective use of coupons.
