What Thanksgiving feast would be complete without pumpkin pie? Teresa Hammonds from Ashley's Pastry Shop gives us her top secrets to make the most delectable pumpkin pie.
Pie Filling
1 cup firmly packed brown sugar
1/2 tsp sal
1 1/2 tsp ground cinnamon
1/8 tsp all spice
1/2 tsp dried ginger
2 large eggs
1 can (15 oz) pumpkin
1 1/2 cup milk
Combine sugar, salt, and spices in a small bowl.
Beat eggs and pumpkin together, then add sugar mixture.
Slowly add milk, and pour into pie shell.
Pie Crust
1 cup all purpose flour
1 1/2 tsp sugar
1/4 tsp salt
*Combine all in medium bowl
Blend in 6 tbsp butter- form into coarse crumbs. Use ice cold water to incorporate dough.
Preheat oven to 425, bake at this temperature for 15 minutes, then decrease to 350 and bake for 20 minutes or until knife inserted in center comes out clean.
