TGIFriday's Cooks with Rum

TGIFriday's makes a rum-inspired beef dish and delicious rum punch in the Lifestyle's kitchen.

 

Beef and Jamaican Rum Glaze

 

2 tbsps unsalted butter

2 shallots (minced)

3 minced garlic

1 cup dark rum

3 cups chicken stock

2 tbsps ancho puree

2 tbsps molasses

salt

freshly ground pepper

4 filet mignon (steaks 8 ounces)

 

Melt the butter in a saucepan over medium high heat and sweat the shallots and garlic. Add the rum, bring to a boil and reduce to 1/3 cup. Add the stock, bring to a boil and reduce the heat. Whisk in the remaining ingredients and simmer until reduced to 2 cups.

 

Preheat the grill. Season the steaks on both sides with salt and pepper to taste. Grill to desired doneness. Drizzle with the sauce.

 

 

 

Jamaican Rum Punch

 

1 cup rum

1/2 cup dark rum

1/4 cup coconut rum

2 1/2 cups pineapple juice

2 1/2 cups orange juice

1/4 cup lime juice

3 tbsp grenadine syrup

Ice cubes

 

Mix all ingredients together in a blender or punch bowl. Pour over ice cubes in any type of glass.
