Chef Anthony from DeLish Cafe is back with a decadent breakfast favorite with flair... Deep fried French Toast with Banana's Foster topping! Recipe included.
De’Lish Café Deep Fried French Toast with Bananas Foster Topping
Cut day-old bread sliced into 1” slices. We use Texas Toast, but feel free to make the dish your own by using sourdough, challah or brioche bread. “Day Old” is important because the “staleness” keeps the finished product from becoming too soggy in the middle without having to over cook it! Simply leaving the bread out and exposed air for a couple of hours before cooking also fits the bill!
Whisk together in a bowl the following:
· 2 eggs
· 1 cup heavy cream
· 1 tbs sugar
· 1/4 tsp vanilla extract
· 1 cup of all purpose flour
· 1 ½ teaspoons baking powder
· a pinch of kosher salt
· tsp of cinnamon and nutmeg
*Chef’s tip: Set mixture to the side and allow it to come to room temperature!
Pre0-heat enough Canola or other frying oil in a thick-bottomed pan (to ensure even heating) like a cast iron skillet to medium high heat.
Dip and coat each slice of bread and allow excess batter to fall back into bowl. Cook several pieces in small batches (to prevent oil temperature from cooling too much) until golden brown on each side, approximately 2 minutes per side.
· Transfer to paper towels to drain.
* The Original Bananas Foster Topping:
· 4 tablespoons unsalted butter
· 1/4 cup light brown sugar
· 2 bananas, sliced on a bias
· A pinch cinnamon
o TBS cup of spiced rum
Combine the butter, sugar, and cinnamon in a skillet. Place the pan over low heat on top of the stove, and cook, stirring, until the sugar dissolves. Stir in the banana liqueur, then place the bananas in the pan. When the banana sections soften and begin to brown, carefully add the rum. Continue to cook the sauce until the rum is hot, then tip the pan slightly to ignite the rum. Generously spoon warm sauce over the top of the French Toast and serve immediately.
